Fresh Greek Salad

It's hot and there is NO WAY I am turning on my stove top or oven. 

Cue salads.

I don't love big leafy green salads (I like my greens chopped up), so a fresh quinoa salad with vegetables (and maybe from the garden) with a homemade vinegarette is right up my alley.

For the salad:

Quinoa- 1 cup cooked (make in your Tupperware multicooker to make it even EASIER!)

Handful of cherry or grape tomatoes, cut in quarters

1/2 cucumber, diced

bunch of basil, chopped in chop n prep

OPTIONAL add ons: diced carrots, diced bell peppers, diced onion  

For the Dressing: 

1 T greek seasoning (Kusina Gold made locally in Mason City is my favorite!)

1 tsp garlic powder 

juice of 1/2 lemon

balsalmic vinegar 1/4 c

red wine vinegar 1/4 c

squirt of dijon mustard

olive oil (1 c)

Shake up in Tupperware quick shake or all in one shaker

Dress with feta cheese if you like!
