tupperware tuesday: my healthy version of hamburger helper
Growing up, my mom made us Hamburger Helper. It was one of my favorite meals. Alongside my plate of hamburger helper, I loved a slice of bread and butter. I would scoop the helper onto my bread and eat it like a sandwich. When I was recovering from having Baby David, Dave made me some boxed hamburger helper, because I crave comfort food from my childhood when I'm sick or sad, and I was both. But... it just didn't taste as good as it used to. My taste buds have changed; I really prefer whole foods and vegetables. So I decided to make my own version of hamburger helper, with vegetables.
For the sauce: 1/2 c coconut milk, a handful of garden grape tomatoes, a scoop of homemade hot sauce, 1/2 tsp garlic powder, 1/4 tsp turmeric, and salt and pepper, mixed up in my tupperware power chef chopper.
Chopped sweet potato, onion, and broccoli sautéed (in my tupperware pan of course!) in coconut oil, add cooked ground beef, and cooked brown rice.
