chicken (or egg) salad.

Veggie Chicken Salad IMG_2535 Chicken or egg salad is so easy to make, and even easier with the tupperware power chef chopper.  (I love my chopper so much I wrote a whole blog post about it.)

Chicken (or egg) salad can be made with any ingredients you want and it's a great way to sneak in an extra helping or 2 of veggies.  I don't have a "recipe" I follow, I usually just use what I have in my fridge.

Here are some ideas:

VEGGIES: carrots, broccoli, onion (red, white, or scallions work), bell pepper (green, yellow, orange, or red), celery, and cauliflower

IMG_3075PROTEIN:  chopped up hardboiled eggs or roasted chicken

I add a scoop of mayo, and a shot of mustard (sometimes I use dijon, sometimes chipotle), and mix. You could add any spices you want, some ideas: cilantro, parsley, basil, cumin, garlic, turmeric (maybe not all at once, just add the flavors you love).

Mix it all up, put the seal on, and put it in your fridge. (I love that it's made in just one container--less dishes!)

A quick, healthy, easy lunch....if it lasts that long.
